# Ingredients:

→ Batter

01 - 1 teaspoon vanilla extract
02 - 30 g unsalted butter, melted (plus a bit extra for the pan)
03 - 3 large eggs (make sure they're not cold)
04 - 360 ml milk (regular or plant-based)
05 - 0.25 teaspoon salt
06 - 0.5 teaspoon ground cinnamon

# Instructions:

01 - Start by beating the eggs with milk, vanilla, and melted butter in a bowl. In another bowl, stir together salt, cinnamon, sugar, and flour. Slowly pour the egg mix into the dry stuff while whisking till you get a smooth batter. Let it sit for at least 30 minutes.
02 - Toss butter into a medium pan on medium heat. Add the sliced apples and cook them for a few minutes. Then sprinkle on brown sugar, cinnamon, nutmeg, and salt. Let it cook till the apples go soft (5–7 minutes). Finally, take off the heat and stir in vanilla and lemon juice.
03 - Warm up your non-stick skillet on medium heat and brush with melted butter. Scoop around 60 ml of the batter into the pan and swirl to spread it thin. Let it cook for 1–2 minutes till golden, then flip over for another 20–30 seconds. Move finished crepes to a plate. Repeat till you run out of batter.
04 - Pile a couple spoonfuls of the warm apple mix down the middle of each crepe. Fold them up however you like—roll or make quarters—and keep the filling inside.
05 - Give a generous sprinkle of powdered sugar before serving. Go wild with maple syrup, nuts, or whipped cream if you're feeling fancy.
