BBQ Cornbread Chicken (Print Version)

# Ingredients:

→ Filling

01 - 15 ounces of tomato sauce
02 - 1 cup of BBQ sauce
03 - 1 chopped green bell pepper
04 - Half a yellow onion, diced
05 - 1 lb of ground chicken

→ Cornbread Topping

06 - 1 cup plus 1 cup of shredded cheddar cheese
07 - 1/2 cup of cornmeal (yellow)
08 - 1/3 cup granulated sugar
09 - 1 large room temperature egg
10 - 1/2 cup of milk
11 - 1/4 cup butter, melted
12 - 1/2 cup all-purpose flour
13 - 1 tsp baking powder
14 - A pinch of salt

# Instructions:

01 - Crank your oven to 400°F and let it heat up.
02 - Lightly coat a 9-inch square baking pan with cooking spray.
03 - Toss chicken, onion, and bell pepper into a warm skillet. Cook over medium heat for about 5-6 minutes, stirring often.
04 - Pour in tomato sauce along with BBQ sauce. Let it boil briefly, then turn the heat low and let it bubble away for 5 minutes.
05 - Mix the flour, cornmeal, sugar, baking powder, salt, milk, egg, and melted butter in a big bowl until smooth and combined.
06 - Spread the filling mixture into the prepared dish, layer it with shredded cheese, and pour the cornbread mixture over everything.
07 - Pop your dish in the hot oven for 30-35 minutes. It's ready when your cornbread topping turns a lovely golden brown.
08 - Leave it alone for 5 minutes before you dig in with a spoon.

01 - Make sure the top of your cornbread is golden and firm before pulling it out of the oven.
