Buffalo Chicken Blue Cheese Pizza (Print Version)

# Ingredients:

→ Main

01 - 35 g banana pepper rings, make sure they're dry
02 - 35 g red onion, sliced up thin
03 - 165 g mozzarella cheese, grated
04 - 120 ml pizza sauce
05 - 450 g pizza dough, let it come to room temp
06 - 60 ml blue cheese dressing, split up (swap for ranch if you want)
07 - 80 ml buffalo sauce, keep a little extra for drizzling
08 - 1.5 cups (about 225g) cooked chicken, pulled apart

→ Garlic Butter Parmesan Crust

09 - 0.5 g garlic powder
10 - 5 g Parmesan cheese, super finely grated
11 - 15 g unsalted butter, melted down

→ To Garnish

12 - Fresh parsley, chopped up
13 - Red pepper flakes
14 - Chives or green onions, thin slices

# Instructions:

01 - Add green onions or chives, parsley, and some red pepper flakes on top. Cut it up and dig in right away.
02 - Pull your pizza out, brush that garlic butter Parmesan blend over the crust edges. Pop it back in the oven for another couple of minutes till the crust's nice and golden.
03 - Mix up your melted butter, garlic powder, and Parmesan in a tiny bowl.
04 - Put the pizza in the oven for about 13 minutes. You're looking for melted cheese and a crust that looks just about set.
05 - Pour about 3 spoonfuls of blue cheese dressing and a splash or two more buffalo sauce over everything on top.
06 - Start with the pizza sauce spread out on your dough. Lay down most of your mozzarella, then scatter the chicken, onions, and banana peppers. Finish with a little more mozzarella on top.
07 - Roll out or hand-stretch the dough on a lightly greased 30-cm pan or baking stone. Stab it all over with a fork, so it won't puff up too much.
08 - Mix your shredded chicken, buffalo sauce, and about a spoon of blue cheese dressing in a bowl. Let the flavors hang out together while you do the rest.
09 - Heat your oven up to 232°C and throw in your pizza stone if you're using one. This'll help with crispy crust and even baking.

# Notes:

01 - Block mozzarella (whole milk, low-moisture) melts best if you shred it yourself.
02 - Try Marie’s chunky blue cheese dressing or a favorite cold blue cheese. Makes everything tastier.
03 - Store-bought dough is easy but making your own can give you a chewier bite.
04 - Fresh mozzarella's got too much liquid – it'll just make your crust soggy. Stick to the drier kind.
