Chilled Peach Lemon Tea (Print Version)

# Ingredients:

→ Peach Syrup

01 - 200 grams white sugar
02 - 240 millilitres water
03 - 300 grams frozen peaches

→ Iced Tea

04 - 240 millilitres peach syrup, or toss in a splash more if you want it sweeter
05 - Juice from 2 lemons
06 - 2 teaspoons baking soda
07 - 8 black tea bags
08 - 1.9 litres water

# Instructions:

01 - Toss frozen peaches, sugar, and water into a small pot. Cook over medium flame for about 10 minutes, stirring once in a while. Let it cool right down for half an hour or so when you’re done.
02 - Push the syrup through a fine sieve to catch the chunks. You can throw away the peach bits or keep ‘em for some extra flair.
03 - Heat up 950 millilitres of water in a medium pot till it’s boiling. Drop in the tea bags and let them sit and steep for 5 minutes.
04 - Pour the rest of the cold water—another 950 millilitres—into a pitcher that holds 2 litres. Squeeze those tea bags before tossing them. Move the fresh tea to the pitcher.
05 - Sprinkle in baking soda, lemon juice, and peach syrup. Want it sweeter? Pour in a bit more syrup. Pop the pitcher in the fridge for at least an hour. Add some ice when you serve. Lemon slices on top work great if you need a garnish.

01 - Hang onto those cooked peaches and drop them into glasses for a bit of fruit or pile them onto your favorite dessert.
