Set your oven to 350°F and let it warm up. Generously spray a nonstick baking sheet with cooking oil.

Fill a big pot with salted water and get it boiling. Toss in the cauliflower pieces and cook until soft enough to poke with a fork, 5 to 10 minutes. Drain really well, then transfer the pieces to a food processor. Blend them into small, rice-like bits, but don't overdo it.

Scoop 3 tightly packed cups of your processed cauliflower into a mixing bowl. Add the diced onion, Parmesan, breadcrumbs, egg, 1 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir everything until it comes together like chunky mashed potatoes.

Grab a bit of the mixture, around 1 to 2 tablespoons, and shape it into a tater tot form with your hands. Lay it on your greased baking sheet, ensuring there's an inch of space between each. Keep going until you've used up all the mixture.

Pop the baking sheet into the oven for 20 minutes. Turn the tots carefully, then bake them another 10 to 15 minutes until they're golden and crispy. Serve with ketchup, hummus, or the dip of your choice.

Warm up your air fryer to 400°F. Spray the basket with oil before adding a layer of tots. Cook for 6 minutes, give them a flip, and fry for another 3 to 5 minutes until they're crisp and golden brown.
