Crispy Onion Bhaji (Print Version)

# Ingredients:

01 - 1 teaspoon freshly squeezed lime or lemon juice
02 - ½ cup water (120 ml)
03 - ¾ teaspoon salt
04 - 1 tablespoon nutritional yeast
05 - 1 cup chickpea flour (100 g)
06 - 2 medium onions (300 g), thinly sliced
07 - 3 tablespoons coconut oil, for frying
08 - ½ teaspoon turmeric powder
09 - 1 tablespoon chopped parsley (or cilantro)
10 - ¾ teaspoon ground cumin
11 - 1 green chili pepper, finely diced

# Instructions:

01 - First, peel your onions. Then with a sharp knife or a mandoline, cut them into thin strips. Put them to the side once done.
02 - Grab a medium-sized bowl. Stir together chickpea flour, ground cumin, turmeric, nutritional yeast, lime juice, salt, water, parsley, and green chili. Keep mixing until you get a medium-thick batter. Add tiny amounts of water (a teaspoon each) if it's too thick.
03 - Drop the sliced onions into the batter and stir really well, so they're fully coated.
04 - Set a big skillet on medium heat and melt a tablespoon of coconut oil in it.
05 - With some tongs, grab small portions of the battered onions and place them in the hot skillet. Fry about four fritters at a time, cooking for around 2-4 minutes on each side until they're crunchy and golden brown.
06 - Keep frying the rest of the onion mix. When done, serve them up hot with your favorite dipping sauce, like a cooling cucumber raita.
