Cozy Egg Spinach Bagel (Print Version)

# Ingredients:

→ Bagel Base

01 - 3 bagels, any kind you like, sliced open

→ Egg and Cheese Filling

02 - ½ teaspoon black pepper, freshly cracked
03 - ¼ teaspoon salt
04 - ½ tablespoon garlic powder
05 - 1 teaspoon Dijon mustard
06 - 2-3 tablespoons chopped fresh chives
07 - 1 cup chopped baby spinach
08 - ½ cup grated mild cheddar
09 - ½ cup ricotta, drained well
10 - 2 big eggs

→ For Assembling

11 - 2-3 tablespoons soft butter

→ Optional Garnishes

12 - Hot sauce
13 - Some avocado slices
14 - Crispy bacon, cooked

# Instructions:

01 - Grab all your main toppings or garnishes and set them aside so they’re ready for the end.
02 - Once your eggs are beaten up with the seasonings, toss in cheddar, spinach, and chives. Mix it just enough so it comes together, but don’t overdo it.
03 - Crack eggs into a medium bowl with Dijon, ricotta, garlic powder, salt, and pepper. Whisk until it looks nice and smooth.
04 - Slice every bagel in half. Spread your soft butter on the top halves (cut side). Set the tops aside for later.
05 - Spoon a good bit of the egg mix onto each bottom half. If you’re feeling cheesy, toss a sprinkle more cheddar on now.
06 - Pop both halves in your air fryer, buttered side up. Cook at 200°C for 8–10 minutes or until egg is cooked and tops go golden. Pull out, pile on garnish if you want, set the tops on, and eat right away.

# Notes:

01 - Drain ricotta really well or your filling can get runny.
02 - Don’t have an air fryer? No worries—bake these guys in the oven at 175°C for about 10-12 minutes instead.
