Hearty Family Goulash (Print Version)

# Ingredients:

01 - 1 large onion, chopped finely
02 - 1 red bell pepper, cut into small chunks
03 - 1 green bell pepper, cut into small chunks
04 - 3 garlic cloves, crushed
05 - 1 lb ground beef, lean
06 - 2 cups macaroni, elbow style
07 - 15 oz can of tomato sauce
08 - 14.5 oz can of diced tomatoes; smoky-roasted kind preferred
09 - 1 cup cheddar cheese, grated
10 - 2 teaspoons dried Italian herbs
11 - Season with as much salt and black pepper as you like

# Instructions:

01 - Toss the ground beef into a heated pot, break it up while cooking, and let it brown completely.
02 - Warm a dash of olive oil in a big pot, and cook the onions with garlic until they smell amazing.
03 - Throw in the diced red and green peppers, give it all a good stir, and cook for a couple of minutes until they soften.
04 - Pour in the tomato sauce, the diced tomatoes, and sprinkle on the Italian seasoning. Stir it all together well.
05 - Drop the macaroni into the pot, pour in enough water to just cover them above by about an inch, and bring everything to a boil.
06 - Turn the heat down low, and let it gently bubble for about 10-12 minutes while the pasta softens.
07 - Take the pot off the heat, sprinkle cheddar cheese liberally over the top, cover it for a few minutes so the cheese melts, and enjoy!

# Notes:

01 - Using fire-roasted canned tomatoes gives the dish a unique smoky kick.
02 - Crank up the heat by mixing in cayenne pepper or chili flakes to the seasonings.
