Toss the ground beef into a heated pot, break it up while cooking, and let it brown completely.

Warm a dash of olive oil in a big pot, and cook the onions with garlic until they smell amazing.

Throw in the diced red and green peppers, give it all a good stir, and cook for a couple of minutes until they soften.

Pour in the tomato sauce, the diced tomatoes, and sprinkle on the Italian seasoning. Stir it all together well.

Drop the macaroni into the pot, pour in enough water to just cover them above by about an inch, and bring everything to a boil.

Turn the heat down low, and let it gently bubble for about 10-12 minutes while the pasta softens.

Take the pot off the heat, sprinkle cheddar cheese liberally over the top, cover it for a few minutes so the cheese melts, and enjoy!
