Lime Cake with Frosting (Print Version)

# Ingredients:

→ Cake

01 - 1 tablespoon lime zest
02 - 60g lime juice, freshly squeezed
03 - 2 large eggs, brought to room temperature
04 - 8g baking powder
05 - 180g milk, at room temperature
06 - 24g lime-flavored gelatin mix
07 - 75g vegetable oil
08 - 150g white sugar
09 - 1g salt
10 - 180g plain flour

→ Lime Frosting

11 - 30g water, heated until hot
12 - 12g lime gelatin powder
13 - 80g lime juice, fresh
14 - 397g sweetened condensed milk

# Instructions:

01 - Use parchment paper to line an 8-inch (20cm) square pan. When you're 5 minutes away from mixing, set your oven to 180°C (350°F).
02 - Grab a large bowl, and whisk your eggs for a solid minute. Add in zest, lime juice, gelatin, vegetable oil, and milk. Mix everything until smooth.
03 - Sift the sugar, salt, flour, and baking powder right on top of the wet ingredients. Stir with care until the texture is smooth—don't overdo it!
04 - Pour batter into your prepped pan. Bake for 30 minutes, or check doneness with a toothpick—it should come out clean. Let it cool naturally.
05 - Stir sweetened condensed milk with fresh lime juice in a medium bowl. It'll start to thicken while you mix.
06 - Dissolve the gelatin powder entirely by mixing it with the hot water. Blend this into the sweetened condensed milk and lime mixture.
07 - Spread the frosting evenly over the completely cooled cake. Chill in the fridge for at least 2 hours before digging in.

# Notes:

01 - Keep leftovers in the fridge, but take them out 20 minutes ahead of serving for better texture.
