Meatballs with Tzatziki (Print Version)

# Ingredients:

→ Greek Meatballs

01 - 1/3 cup breadcrumbs (regular or gluten-free options)
02 - 1 egg
03 - 1 teaspoon dried oregano
04 - 1/4 cup fresh parsley, chopped
05 - 2 ounces crumbled feta cheese
06 - 1 clove of garlic, finely grated
07 - 1/4 teaspoon cinnamon powder
08 - 1 teaspoon ground cumin
09 - 1/2 teaspoon ground coriander
10 - Zest from one lemon
11 - 3 tablespoons onion, grated
12 - 2 tablespoons lemon juice, freshly squeezed
13 - Salt and pepper to taste
14 - 1 pound ground beef (lean)

→ Tzatziki Sauce

15 - 1/2 teaspoon garlic (grated or powder)
16 - 1 cup cucumber, shredded and squeezed dry
17 - Salt and pepper to taste (try 1/4 teaspoon sea salt)
18 - 1 tablespoon dill, minced fresh
19 - Lemon juice (from half a lemon)
20 - 1 1/2 cups plain Greek yogurt

# Instructions:

01 - Turn your oven to 450°F. Cover a baking sheet with foil or parchment and give it a quick spray of cooking oil.
02 - Use a whisk in a big bowl to mix parsley, egg, garlic, lemon zest and juice, seasonings, breadcrumbs, onion, and feta.
03 - Toss ground beef into the mix and gently combine it all with your hands. Roll into balls about a tablespoon big.
04 - Put the meatballs on that prepared sheet. Spray the tops with olive oil and bake on the middle rack for 10-12 minutes or until they're golden.
05 - As the meatballs bake, use a medium bowl to stir together cucumber, yogurt, dill, lemon juice, garlic, salt, and pepper.
06 - Take the meatballs out of the oven and pair them up with the prepared tzatziki sauce for dipping or spreading.
