Let your oven warm up to 180°C first. If you’re using classic noodles, pop them into boiling, salted water, cook as the packet tells you, drain, and set aside.

Toss in your ground pork or beef, sprinkle some salt and pepper, brown it well, then pour off any extra grease.

Add in your tomato sauce, oregano, and basil next. Mix everything up and let it bubble over low heat for about 5 to 7 minutes so the flavors really come together.

Crack the egg into a bowl with ricotta or cottage cheese. Sprinkle a pinch of salt, pepper, and mix it smooth.

Heat up olive oil in a big frying pan. Soften the chopped onion for about 3 minutes then stir in that garlic for one more minute.

Grab a 23×33 cm pan, spread a little bit of saucy meat on the bottom. Lay 3 noodles down, dollop with a third of the cheesy stuff, then some meat sauce, then mozzarella. Keep stacking up – three times total. Pour whatever’s left of the sauce on top and shower it with parmesan last.

Cover everything with foil, then bake it for 25 minutes. Take the foil off and let it cook another 10 to 15 minutes till it looks golden and bubbly.

Give it 10 minutes on the counter to settle before you slice it up. Dig in while it’s warm.
