Once the syrup cools off, pour a little over ice and fill up with soda water. Or just let it chill out even more so you can stash it in the fridge—it's fine for a week.

Set the pot aside and wait about 15 minutes till it's not hot. Push everything through a strainer into a jar so you get a smooth syrup.

Keep the heat going for ten more minutes after mashing so the syrup gets thicker.

After about five minutes of bubbling on the stove, squish the cherries up with a masher or a fork.

Toss halved cherries (take out the pits), sugar, vanilla, and water into a small pot and put it on the stove over medium heat.
