Cajun Chicken Alabama Sauce (Print Version)

# Ingredients:

→ Cajun-Spiced Chicken

01 - 4 skinless, boneless chicken breasts
02 - 1 tablespoon fresh lemon juice
03 - 2 tablespoons olive oil
04 - 1 tablespoon Cajun spice blend
05 - 1 teaspoon smoked paprika
06 - 1/4 teaspoon cayenne pepper (add less if you want it mild)
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon garlic powder
09 - Salt and pepper as needed

→ Tangy White Sauce

10 - 1 cup mayo
11 - 1/4 teaspoon ground cayenne for a light kick
12 - 2 tablespoons apple cider vinegar
13 - 1 teaspoon fresh lemon juice
14 - 1 tablespoon Dijon mustard
15 - 1/2 teaspoon onion powder
16 - 1/2 teaspoon garlic powder
17 - Salt and black pepper, to taste
18 - Chopped parsley (optional, for sprinkling at the end)

# Instructions:

01 - Start by heating up your grill to around 400°F (200°C). Mix up Cajun spices, paprika, garlic and onion powder, cayenne, plus a bit of salt and pepper in a small bowl. Pour olive oil onto the chicken and rub in the spice mix. Add a squeeze of lemon juice on top for some zing. Set aside for 10 to 15 minutes to let flavors stick.
02 - Put your marinated chicken on the grill. Cook each side for 6 to 7 minutes or until the inside hits 165°F (75°C). Take it off the heat and let it sit a few minutes before serving.
03 - In another small bowl, mix the mayo, mustard, apple cider vinegar, lemon juice, garlic and onion powder, cayenne, salt, and pepper. Chill it in the fridge for 15 to 20 minutes so the flavors come together.
04 - Serve that juicy grilled chicken with a drizzle of the white sauce on top or keep it on the side to dip. Sprinkle with parsley if you're feeling fancy.

# Notes:

01 - Dial back the cayenne in the seasoning or sauce if you want it less spicy.
02 - No grill? Use a griddle or bake the chicken at 400°F (200°C) for 20-25 minutes instead.
03 - Fresh herbs like cilantro or thyme can add a nice change to the flavor.
