Blueberry Energy Snacks (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 cup dried blueberries or 2 pints fresh blueberries
02 - 2 cups rolled oats
03 - 1/2 cup shredded unsweetened coconut
04 - 3/4 cup whole, organic flax seeds
05 - 1/2 cup semi-sweet chocolate chips
06 - 1 scoop optional protein powder
07 - 1 teaspoon cinnamon, ground

→ Wet Ingredients

08 - 1 cup cookie butter or cashew butter
09 - 1/3 cup raw honey
10 - 1/2 teaspoon vanilla essence
11 - 3 tablespoons Pichuberry fruit puree

# Instructions:

01 - If you’re going with fresh blueberries, dry them in the oven. First, wash them well, then pat them with a paper towel until they’re dry. Heat the oven to 225°F (110°C). Lay parchment paper on baking sheets and place blueberries on it, ensuring they don’t touch. Bake them for about four hours.
02 - Grab a large bowl and toss in the oats, flax seeds, either type of blueberries, coconut flakes, protein powder (if you’re adding it), chocolate chips, and cinnamon. Whisk everything together until it’s well mixed.
03 - Add the honey, fruit puree, cookie butter, and vanilla into the dry mix. Stir it all really well with your hands or a spatula until it all sticks together.
04 - Line a baking sheet with wax paper or parchment. Use a cookie scoop (around 1.5 tablespoons size) to grab some of the mixture. Pack it down firmly against the bowl. Roll into balls and arrange on the lined sheet.
05 - Let the energy balls rest on the baking sheet for one hour, or if you need them firm faster, pop them in the freezer for 30 minutes.
06 - Keep the bites in an airtight box. You can snack on them for weeks if stored properly or freeze them to make them last even longer.
