Effortless Cajun Garlic Butter Steak (Print Version)

# Ingredients:

→ Cajun Spice Mix

01 - 1/4 teaspoon dried thyme
02 - 1/2 teaspoon packed light brown sugar
03 - 1/2 teaspoon cayenne pepper
04 - 1/2 teaspoon dried oregano
05 - 1/2 teaspoon black pepper
06 - 1 teaspoon onion powder
07 - 1 1/2 teaspoons garlic powder
08 - 1 1/2 teaspoons kosher salt
09 - 1 tablespoon smoked paprika

→ Steak Chunks

10 - 680 grams ribeye, sirloin, or strip steak
11 - 3 tablespoons unsalted butter
12 - 5 cloves garlic, grated or minced
13 - Minced parsley (fresh), to sprinkle on top
14 - 2 tablespoons vegetable oil, split

# Instructions:

01 - Chop the steak into bite-sized chunks, around 5 centimetres each. Pop them in a roomy bowl.
02 - Grab another bowl and shake together smoked paprika, kosher salt, garlic powder, onion powder, black pepper, dried oregano, cayenne, brown sugar, and dried thyme. Pour this over the steak and toss it all so every piece is covered.
03 - Set a big sturdy skillet on medium-high and leave it until you see a bit of smoke curling up.
04 - Pour in 1 tablespoon of oil. Drop in half the steak so none are on top of each other. Let them sear without moving for 2 minutes, turn them, and keep cooking for 2 more minutes till each bit is really brown. Move those to a plate and repeat with the rest of the oil and steak.
05 - Turn the heat down to medium-low. Drop in the butter. Let it melt, then mix in the garlic and stir, scraping up any dark bits from the pan for about 30 seconds.
06 - Flip the heat off. Put the steak chunks back into the skillet and toss to coat in all that garlic butter. Sprinkle with fresh parsley and serve right away.

# Notes:

01 - For tinier steak bites, chop up pieces to 2.5 centimetres and shave off a little searing time.
02 - You can make the Cajun mix as spicy or as mild as you want.
