Crispy Cajun Pasta (Print Version)

# Ingredients:

→ Chicken

01 - 4 thinly sliced chicken breasts, no bones or skin
02 - 1/4 tsp black pepper
03 - 1/4 tsp table salt
04 - 1/2 tsp Cajun spice mix
05 - 1/4 cup all-purpose flour
06 - 2 eggs, whisked well
07 - 3/4 cup crispy panko crumbs
08 - 1 cup grated Parmesan
09 - 1/4 cup frying oil

→ Pasta and Vegetables

10 - 2 tsp minced garlic
11 - 1 diced yellow bell pepper
12 - Salt and black pepper to your taste
13 - 1 red bell pepper, diced
14 - 1 sliced cup of mushrooms
15 - 1 tbsp olive oil
16 - 1/4 cup finely chopped onion
17 - 10 oz cooked bowtie pasta, drained

→ Cajun Cream Sauce

18 - 2 tbsp butter
19 - 1 tbsp all-purpose flour
20 - Salt and black pepper, based on taste
21 - 1 tbsp Cajun spice
22 - 1 cup shredded Parmesan
23 - Optional: a pinch of cayenne, to your liking
24 - 2 cups heavy cream
25 - 3/4 cup low-sodium chicken stock

# Instructions:

01 - Take the chicken slices and sprinkle them with Cajun seasoning, salt, and pepper. First, coat each piece in flour, then dunk it in eggs, and finally roll it in a Parmesan and panko crumb mix. Warm the oil in a pan over medium-high heat. Cook each piece until it turns crispy and gold in color, around 3–4 minutes per side. Put aside to keep warm.
02 - In a heated skillet with olive oil on medium heat, toss in the garlic and let it cook for a minute until it smells nice. Add the mushrooms, then stir in the diced onions, yellow bell pepper, and red one too. Let it cook for about 5–7 minutes, stirring every now and then, until soft. Toss in some salt and pepper. Finally, mix the cooked bowtie pasta with the veggies. Keep it warm.
03 - Melt the butter over medium heat in a saucepan. Mix in the flour and stir for a minute or two. Pour in the chicken stock and heavy cream bit by bit, stirring the whole time until it’s all thick—this should take about 4–5 minutes. Toss in the Parmesan and Cajun spices, plus some salt and pepper. If you want it spicy, sprinkle a little cayenne. Stir well until blended smoothly.
04 - Mix the creamy Cajun sauce with the bowtie pasta and the colorful veggies. Lay the crunchy Cajun chicken slices on top. Serve warm and if you’d like, sprinkle on extra Parmesan before digging in.

01 - Like it spicy? Use more cayenne in the sauce to heat things up.
02 - Switch the bowtie pasta for any type you prefer.
03 - Want it lighter? Replace heavy cream with half-and-half.
