Cheesecake Sprinkle Delight (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 ¼ cups all-purpose flour
02 - ¼ cup rainbow sprinkles
03 - 1 teaspoon salt
04 - 1 teaspoon baking soda
05 - ½ cup butter, softened
06 - ½ cup white sugar
07 - 1 egg
08 - 1 teaspoon vanilla extract

→ Creamy Cheesecake Layer

09 - ¾ cup yellow cake mix
10 - 2 teaspoons vanilla extract
11 - ¾ cup granulated sugar
12 - 4 eggs
13 - 4 (8-ounce) bricks cream cheese, slightly softened

# Instructions:

01 - Set your oven to 325°F (165°C) so it can heat up. Cover a springform pan with parchment paper—leave it aside for now. Blend your butter and sugar until it’s airy and pale. Toss in the egg, vanilla, salt, and baking soda, then mix. Slowly add the flour bit by bit until it’s blended. Throw in the sprinkles and gently mix them in. Press this dough into your lined pan.
02 - Grab a big bowl and mix the cream cheese with the sugar until it’s silky. Stir in the cake mix and vanilla. Add the eggs last and blend thoroughly.
03 - Pour the creamy mixture over your cookie base. Pop it in the oven for about 55-60 minutes, or until the middle looks almost done. Let the cheesecake chill in the fridge for 4-6 hours before slicing. If you want, add whipped cream, sprinkles, or cookies on top for a bit extra.
