Heat olive oil in a big pan over medium-high flame. Add the steak chunks and cook until golden all over. Take the meat out and put it aside.

Throw the chopped onions into the same pan and cook them for about 5 minutes until see-through. Then toss in the garlic and stir for another minute until it smells amazing.

Mix in the rice, beef broth, paprika, and thyme. Turn the heat up until it starts to bubble.

Drop the heat to low, cover the pan, and let the rice cook gently for 15-20 minutes. It’s ready when it soaks up all the liquid and gets soft.

Add the steak back into the pan along with the cheddar cheese. Stir everything together until the cheese melts and blends in smoothly.

Add salt and pepper to taste, then sprinkle fresh parsley on top just before serving.
