Chocolate Dipped Strawberry Cheesecake (Print Version)

# Ingredients:

→ Crust

01 - 1 ¾ cup ground graham crackers
02 - 6 Tablespoons unsalted butter, melted

→ Cheesecake Filling

03 - 16 oz cream cheese, softened
04 - ¾ cup granulated sugar
05 - 2 large eggs
06 - 1 large egg yolk
07 - 2 teaspoons vanilla extract
08 - ½ teaspoon fine sea salt

→ Topping

09 - 18 fresh strawberries
10 - 8 oz 56% dark chocolate, melted

# Instructions:

01 - Mix ground graham crackers with melted butter. Press about 1½ tablespoon of mixture into each mini cheesecake mold cavity using a tamper or muddler.
02 - Beat cream cheese until smooth, gradually add sugar. Add eggs and yolk one at a time, then mix in vanilla and salt until smooth. Divide filling among molds and smooth tops.
03 - Bake at 325°F for 20-25 minutes until slightly puffed. Cool to room temperature, then chill in fridge for at least 1 hour.
04 - Remove chilled cheesecakes from molds. Top each with melted chocolate, then add chocolate-dipped strawberries. Serve immediately for best results.
