Preheat oven to 450°F. Clarify butter or melt ghee.

Pour ¼ cup butter/ghee into a 6-inch skillet. Layer potatoes in overlapping circles. Season with salt, pepper, and thyme. Drizzle butter/ghee.

Layer remaining potatoes, seasoning each layer with salt, pepper, and thyme.

Press potatoes with a flat-bottomed pan to form a cake shape.

Bake for 30 minutes. Press again. Bake 25 minutes. Press again. Bake 5 minutes until golden.

Invert onto a plate and slice into desired pieces.
