French Potato Layer Cake (Print Version)

# Ingredients:

01 - 2 lbs Yukon gold potatoes, thinly sliced
02 - 1 stick clarified butter or 8 tablespoons ghee
03 - 1 tbsp fresh thyme leaves
04 - Salt, to taste
05 - Freshly milled black pepper, to taste

# Instructions:

01 - Preheat oven to 450°F. Clarify butter or melt ghee.
02 - Pour ¼ cup butter/ghee into a 6-inch skillet. Layer potatoes in overlapping circles. Season with salt, pepper, and thyme. Drizzle butter/ghee.
03 - Layer remaining potatoes, seasoning each layer with salt, pepper, and thyme.
04 - Press potatoes with a flat-bottomed pan to form a cake shape.
05 - Bake for 30 minutes. Press again. Bake 25 minutes. Press again. Bake 5 minutes until golden.
06 - Invert onto a plate and slice into desired pieces.
