Cowboy Queso (Print Version)

# Ingredients:

→ Base

01 - 1/2 pound hot or regular pork sausage, casing removed
02 - 3/4 cup Pale Ale beer
03 - 16 ounces Velveeta, cut into 1-inch cubes
04 - 1/2 cup freshly shredded pepper jack cheese

→ Mix-ins

05 - 1 (14.5-ounce) can Rotel tomatoes, undrained
06 - 1 cup black beans, drained and rinsed
07 - 1/4 cup chopped fresh cilantro

→ Seasonings

08 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - Brown sausage in medium skillet over medium heat, breaking into crumbles and seasoning with salt and pepper.
02 - Pour in beer and simmer 3-4 minutes, stirring occasionally to reduce.
03 - Add Velveeta and pepper jack cheese, stirring until completely melted, about 3-5 minutes.
04 - Stir in Rotel tomatoes, black beans, and cilantro until well combined. Serve immediately with chips.
