Drop the sago pearls into a pot of boiling water. Let them cook for roughly 10 to 15 minutes, giving them a stir now and then until they turn see-through. Once done, turn off the heat, pop the lid on, and leave it for another 5 minutes. Drain and rinse under cold water.

Take a big bowl and blend together the coconut milk, condensed milk, and mango puree. Add evaporated milk if you want it less thick.

Fold the prepared sago pearls into the mixture and place it in the fridge for at least an hour to chill.

Spoon the mixture into small bowls or serving glasses. Toss on some diced mangoes or drizzle with more mango puree. Add a touch of crushed ice or mint leaves if you’re feeling fancy.
