Creamy Mango Sago (Print Version)

01 - 1 and a half cups coconut milk
02 - 2 juicy mangoes, diced after peeling
03 - Half a cup of mango puree (use fresh or canned)
04 - 1 cup of small tapioca pearls
05 - Half a cup of sweetened condensed milk—taste and adjust amount as needed
06 - Half a cup of evaporated or regular milk (optional; use for thinner texture)
07 - Crushed or cubed ice (optional, for serving)

# Instructions:

01 - Drop the sago pearls into a pot of boiling water. Let them cook for roughly 10 to 15 minutes, giving them a stir now and then until they turn see-through. Once done, turn off the heat, pop the lid on, and leave it for another 5 minutes. Drain and rinse under cold water.
02 - Take a big bowl and blend together the coconut milk, condensed milk, and mango puree. Add evaporated milk if you want it less thick.
03 - Fold the prepared sago pearls into the mixture and place it in the fridge for at least an hour to chill.
04 - Spoon the mixture into small bowls or serving glasses. Toss on some diced mangoes or drizzle with more mango puree. Add a touch of crushed ice or mint leaves if you’re feeling fancy.

01 - Taste the mixture and sweeten more if your mangoes aren’t super ripe.
02 - For a plant-based twist, swap condensed milk with something like maple syrup or coconut condensed milk.
03 - This dish tastes best chilled.
