Grab a little bowl and stir together the salt, paprika, chili powder, garlic powder, onion powder, and cayenne. It doesn't take long, just mix so everything's really combined.

Fill a deep pot with oil, making sure it's at least 7.5 cm deep. Turn up the heat until the oil hits 180°C. Wait for it to get nice and hot.

Carefully drop a handful of the frozen fries into the hot oil. Fry them for about 6 to 8 minutes. When they're crispy and golden, fish them out using a slotted spoon and let them drain on some paper towels.

Tear those cheese slices into smaller pieces. Toss them into a bowl with milk and jalapeño brine. Pop the bowl in the microwave, heat in 30-second bursts, and stir every time until it’s all smooth and melted together.

While your fries are still warm, put them in a big bowl. Sprinkle your spice blend all over and toss so every fry gets coated.

Pile the seasoned fries onto your platter. Serve them up hot with plenty of gooey cheese sauce on the side for dipping.
