# Instructions:

01 - Pat dry fresh cod fillets to remove excess moisture.
02 - In a bowl, whisk together flour, eggs, beer (or sparkling water), salt, and pepper until smooth.
03 - Coat each fillet in the batter, then dredge in panko breadcrumbs for extra crunch.
04 - Heat oil in a deep skillet to 350°F (175°C) and fry coated fillets for 3-4 minutes per side until golden brown.
05 - Lightly toast the brioche buns and spread tartar sauce on both sides before adding the fried cod.
