Slice mozzarella sticks into 1-inch chunks after unwrapping them. Arrange them spaced out on a parchment-lined tray and pop it in the freezer for at least half an hour.

Set up three shallow bowls: one with plain flour, a second with whisked eggs, and a third combining breadcrumbs with garlic, onion, paprika, and salt. Stir up the breadcrumb mix to blend the spices evenly.

Take out the frozen cheese bits. In small groups, coat each piece first in flour, then dunk them in the egg. Shake off the extra and roll them through breadcrumbs. For extra crunch, dip them in egg again and repeat the breadcrumb layer.

Spread your coated cheese bites on the same tray, but make sure none touch. Freeze them again for around 15-20 minutes.

In a heavy-bottomed deep pan, pour about 2 inches of vegetable oil. Heat up on medium until it hits roughly 175°C (350°F). Drop in a breadcrumb to check—it should sizzle and turn golden within 20-30 seconds.

Put 4-6 frozen pieces into your hot oil at a time. Fry them for 1-2 minutes or until they look beautifully golden. Lift them out using a slotted spoon.

Move the cooked cheese bites onto a plate with paper towels to absorb any extra oil. Eat them right away, pairing with marinara sauce and optional herb garnishes.
