Cinnamon-Sugar Pineapple Fritters (Print Version)

# Ingredients:

→ Pineapple Fritter Rings

01 - 2 small fresh pineapples
02 - 1 cup all-purpose flour
03 - 2 tablespoons granulated sugar
04 - 1/2 teaspoon cinnamon
05 - 1/4 teaspoon nutmeg
06 - 1/4 teaspoon baking powder
07 - 1/4 teaspoon salt
08 - 1 large egg, beaten
09 - 1 1/4 cups low-fat buttermilk
10 - splash of vanilla
11 - vegetable oil, for frying

→ For the Cinnamon-Sugar Topping

12 - 1/3 cup granulated sugar
13 - 2 teaspoons cinnamon

# Instructions:

01 - Peel, core, and slice the pineapples into 1/4-inch thick rings, pat dry. Set aside.
02 - Line a baking sheet with paper towels; set aside.
03 - In a medium bowl, whisk together the flour, sugar, cinnamon, nutmeg, baking powder, and salt. Add in the egg, buttermilk, and vanilla; stir until just combined.
04 - Add about 2 inches of oil to a large heavy-bottomed pot set over medium heat, until it reaches 350 degrees F.
05 - Dip each pineapple ring into the batter, shaking off any excess. Carefully lower the ring into the oil. Fry pineapple rings 3 or 4 at a time, but don't allow them to touch, for about 1-2 minutes per side, or until golden.
06 - Using tongs, transfer them to the paper towels.
07 - While still warm, dredge them in the cinnamon-sugar mixture.
08 - Repeat the process with the remaining pineapple slices.
09 - Serve and enjoy!
