Set your oven to 425°F (220°C) and stick a baking sheet inside to warm up while the oven gets to temp.

Slice the sweet potatoes into even fries about 1/4 inch thick. Whether you peel them is up to you.

Dump the sweet potato pieces into a bowl filled with cold water and leave them to sit for 30 minutes. This reduces starch to make way for crispier fries.

Pat the fries dry with paper towels so there's no leftover water. Toss them in a large bowl with olive oil, garlic powder, paprika, salt, and black pepper. Add cornstarch here if you're using it and make sure everything is evenly coated.

Carefully pull the heated tray out of the oven. Spread the fries out on it in one layer, leaving space between each piece. Bake for 25-30 minutes, flipping them around halfway through until they're beautifully crisp and golden.

Take the fries out of the oven once they're all crispy. Leave them to cool off a bit before digging in.
