Easy Pesto Chicken (Print Version)

# Ingredients:

01 - 2 lbs chicken breasts, skinless and boneless
02 - 2 tbsp Italian seasoning
03 - 1 cup pesto
04 - Sea salt and black pepper to taste

05 - 4 tbsp pesto
06 - 1 Roma tomato, chopped
07 - 2 tbsp parmesan, grated

# Instructions:

01 - Place the chicken breasts in your crockpot. Season all sides generously with Italian seasoning, sea salt, and freshly ground black pepper.
02 - Spoon the pesto over the chicken breasts, using about 1 cup total. Make sure to cover all sides of the chicken for maximum flavor.
03 - Cover and cook on low heat for 4-5 hours until the chicken is fully cooked through and tender. Check the chicken after about 2 hours to ensure it's not drying out. If it seems dry, add a splash of vegetable broth and continue checking periodically.
04 - Once cooked, top each chicken breast with an additional tablespoon of fresh pesto. Garnish with chopped Roma tomato and a sprinkle of grated parmesan cheese. Serve with your choice of rice, potatoes, pasta, or vegetables.

# Notes:

01 - Chicken breasts can dry out in the slow cooker, so checking halfway through cooking is important.
02 - Using both pesto in the cooking process and fresh pesto as a finishing touch adds layers of flavor.
