Place the chicken breasts in your crockpot. Season all sides generously with Italian seasoning, sea salt, and freshly ground black pepper.

Spoon the pesto over the chicken breasts, using about 1 cup total. Make sure to cover all sides of the chicken for maximum flavor.

Cover and cook on low heat for 4-5 hours until the chicken is fully cooked through and tender. Check the chicken after about 2 hours to ensure it's not drying out. If it seems dry, add a splash of vegetable broth and continue checking periodically.

Once cooked, top each chicken breast with an additional tablespoon of fresh pesto. Garnish with chopped Roma tomato and a sprinkle of grated parmesan cheese. Serve with your choice of rice, potatoes, pasta, or vegetables.
