Turn your oven on to heat up at 200°C (400°F). Put parchment paper on a baking tray, then give it a quick spray of olive oil.

Throw the cottage cheese, almond flour, parmesan, garlic powder, paprika, and some salt and pepper into a bowl. Stir it all up well until it’s evenly combined.

Scoop or shape the mixture into small rounds or flat patties using your fingers or a spoon. Dunk each one into the beaten egg to coat nicely.

Space out the coated pieces on your tray, leaving small gaps between them. Spray olive oil on top for crisp edges and bake for 15-20 minutes. Be sure to turn them halfway so both sides brown evenly.

Give them a minute or two to cool down, then serve while they’re still warm. Perfect for a quick bite or starter.
