Bacon Guacamole Grilled Cheese (Print Version)

# Ingredients:

→ For the sandwich

01 - 2 slices of sourdough bread
02 - 2 tablespoons guacamole (let it come to room temp)
03 - 1 tablespoon salted butter (softened)
04 - 1/2 cup shredded cheddar, or use 2 slices (let them sit out for a bit)
05 - 1 tablespoon crushed tortilla chips (if you want)
06 - 2 bacon strips, cooked and broken up (your call)

# Instructions:

01 - Start by buttering one side of both bread slices. Flip one over so the dry side faces up. Spread guacamole all over, toss on half the cheddar, sprinkle the bacon if you're using it, then add the crushed chips if you feel like it. Drop the rest of the cheese on top. Stick the other bread slice up top, buttered side out.
02 - Put a non-stick pan on medium and let it heat up a bit. Pop in your sandwich. Press it down a little with your spatula and grill for 2-3 minutes per side until crunchy and golden, and the cheese melts everywhere.
03 - Take it off the heat, grab a knife, cut it in two, and enjoy it while it's hot and gooey.

# Notes:

01 - Guacamole tastes best if you make it fresh.
02 - Crispy bacon adds a nice crunchy, salty bite inside.
03 - Switch out the cheddar for any melty cheese you like.
