01 - 1 head of cauliflower
02 - 1 cup plain cottage cheese
03 - 1/2 cup bread crumbs
04 - 1/2 cup grated parmesan cheese
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper
09 - 1/4 cup chopped scallions
10 - 1 egg

# Instructions:

01 - Preheat your oven to 400°F (200°C). Cut the cauliflower into florets, then steam or boil them until tender, about 5-7 minutes. Drain well and allow to cool slightly.
02 - In a large mixing bowl, mash the cooled cauliflower until smooth. Add the cottage cheese, egg, parmesan cheese, scallions, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined.
03 - Gradually add the breadcrumbs to the cauliflower mixture, stirring until incorporated. The mixture should hold together but not be too dry. Scoop out small portions (about 1-2 tablespoons each) and shape them into small cylinder shapes, like traditional tater tots.
04 - Line a baking sheet with parchment paper and arrange the formed tots on it, leaving a little space between each. Bake in the preheated oven for 20-25 minutes, or until they're golden brown and crispy on the outside.
05 - Remove from the oven and let cool for a few minutes before serving. These cauliflower tots are delicious on their own or served with your favorite dipping sauce.
