Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.

In a large bowl, stir together the oats and baking powder.

In a separate bowl, whisk the egg. Then stir in the nut butter, maple syrup (or honey), and vanilla extract until smooth.

Add the wet ingredients to the dry ingredients and stir until well combined. Fold in ½ cup of the chocolate chips.

Spread the mixture evenly into the prepared baking dish. Press the remaining ¼ cup chocolate chips into the top of the mixture.

Bake for 30 minutes, or until the edges are golden brown. Remove from the oven and immediately sprinkle with flaky salt (if using).

Allow the bars to cool completely in the pan before slicing into 9 squares. Serve or refrigerate for later.
