Peach Watermelon Mix (Print Version)

# Ingredients:

→ Salad

01 - 2 yellow peaches, sliced into wedges
02 - 1 shallot, chopped as small as possible
03 - 3 Persian cucumbers, cut into thick slices about ½-inch wide
04 - 4 tablespoons torn mint leaves, plus extra for decoration
05 - A small seedless watermelon, cubed into 1-inch pieces or shaped into melon balls
06 - Kosher salt and some fresh black pepper to season
07 - 1 sheet of fresh feta cheese, diced into ½-inch chunks (roughly ½ cup when cut)
08 - 2 tablespoons olive oil

→ Vinaigrette

09 - 3 cloves of garlic, chopped up
10 - 3 tablespoons red wine vinegar
11 - 1 shallot, sliced finely
12 - 4 tablespoons olive oil
13 - A teaspoon of dried oregano
14 - Kosher salt and freshly cracked black pepper for seasoning

# Instructions:

01 - In a big bowl, mix together the watermelon, chopped shallots, mint, and olive oil. Sprinkle with salt and pepper, then give it a toss to mix everything. Chill in the fridge for at least an hour, but no longer than three.
02 - Take the chilled watermelon mix out of the fridge. Add the peach slices, diced feta, and cucumber pieces. Gently stir so everything blends together. Transfer to a serving plate or dish.
03 - In a tiny bowl, mix all the vinaigrette ingredients by whisking them. Pour it over the salad and adjust the seasoning if you'd like. Serve right away.
