Use your hands or a little brush to clean off the ginger. Cut the pineapple into pieces after taking off its top, peeling the skin, and getting rid of the core.

Break ginger into chunks. Blend some of the pineapple with ginger and a bit of water to get the blender going. Then, blend the rest of the pineapple. Run this mix through a fine mesh strainer into a big bowl while pushing it through with a spatula.

Use your hands or a handheld citrus juicer to squeeze the lemons. Pour the lemon juice into your pineapple and ginger mix, along with the coconut water. Give it a good stir before serving.
