Soft Banana Cookies (Print Version)

# Ingredients:

01 - 1/2 teaspoon baking soda
02 - 1 1/2 cups plain flour
03 - 1/4 teaspoon ground cinnamon
04 - 1/4 teaspoon salt
05 - 1/2 cup white sugar
06 - 1/4 cup packed light brown sugar
07 - 1/2 cup softened unsalted butter
08 - 1 teaspoon vanilla
09 - 3/4 cup ripe bananas, mashed
10 - 1 large egg
11 - 1/2 cup chopped pecans or walnuts

→ Cream Cheese Glaze

12 - 1 tablespoon milk (any kind works)
13 - 1 cup powdered sugar (a.k.a. icing sugar)
14 - 4 oz softened cream cheese
15 - 1/2 teaspoon vanilla

# Instructions:

01 - Set your oven to 350°F (175°C) and cover a baking tray with some parchment paper.
02 - Grab a bowl and toss in your flour, soda, salt, and cinnamon. Give it a good stir and put it aside.
03 - Using a big bowl, beat together the butter, granulated sugar, and brown sugar until it’s fluffy and light.
04 - Throw in the vanilla and the egg, then mix it all together until smooth. Stir in the mashed bananas next.
05 - Pour the dry ingredients into the wet mixture little by little. Stir it just enough to combine, and if you want, fold in the chopped nuts.
06 - Drop rounded tablespoons of the dough onto the baking sheet, leaving about 2 inches of space between each one.
07 - Bake for 10-12 minutes or until the edges are golden brown. Let them sit on the tray for 5 minutes, then move them to a rack to cool completely.
08 - Beat the cream cheese until it’s smooth, then add the powdered sugar, milk, and vanilla. Mix until it’s nice and glossy.
09 - Once the cookies are fully cooled, drizzle or cover each one with the cream cheese glaze.
