# Ingredients:

→ Filling for Tortillas

01 - 2 green onions, chopped
02 - 1 tbsp unsalted butter
03 - 6 large eggs
04 - 1/4 cup milk
05 - 1/2 cup shredded Monterey Jack cheese
06 - 1 cup shredded cheddar cheese
07 - Salt, as needed
08 - Pepper, as needed
09 - 6 big flour tortillas
10 - 1/2 cup cooked hashbrowns or breakfast potatoes (optional)

→ Sausage Sauce

11 - 1/2 lb pork sausage (or substitute with chicken/turkey sausage)
12 - 2 tbsp plain flour
13 - 1.5 cups whole milk
14 - Salt to your liking
15 - Black pepper to your liking
16 - 1/4 tsp garlic powder (only if you'd like)

# Instructions:

01 - On medium heat, cook the sausage in a skillet until browned. Stir in some flour to coat the sausage, give it a minute to cook. Gradually mix in the milk while stirring until smooth. Let it simmer for about 5 minutes until it thickens up. Sprinkle some salt, pepper, and garlic powder (if you're using it) for flavor.
02 - In a bowl, beat together the eggs, milk, salt, and pepper. Heat a skillet with butter, pour in the egg mix, and let it cook gently. Make sure to stop cooking once the eggs are soft and not fully cooked since they'll continue baking later.
03 - Set your oven to 375°F (190°C). Grease a baking dish that's about 9×13 inches. Take each tortilla and stuff it with the cooked eggs, optional potatoes, chopped green onions, and shredded cheeses. Roll the tortillas up snugly and lay them seam-side down in the dish.
04 - Take the sausage mixture you made earlier and pour it over the rolled tortillas, making sure it's spread evenly across all of them. Feeling cheesy? Sprinkle some more cheese on top if you like.
05 - Cover the dish with foil and pop it in the oven to bake for 15 minutes. Then remove the foil and keep baking for another 5–10 minutes, until the top is bubbly and edges have a nice golden touch.
06 - Sprinkle some more green onions on top before serving. It's great with fresh fruit, sour cream, or a dash of hot sauce for a kick.
