Low-Carb Steak and Cauliflower (Print Version)

# Ingredients:

→ Steak Bites

01 - 1 tbsp olive oil
02 - 1 lb new york strip steak (or boneless ribeye, top sirloin), cut into bite-sized cubes
03 - 2 tbsp butter
04 - 4 cloves garlic, minced
05 - 1 1/2 tbsp low sodium soy sauce
06 - 1/4 tsp garlic powder
07 - 1 tbsp parsley, finely chopped

→ Mashed Cauliflower

08 - 3 cups cauliflower rice, steamed until tender
09 - 1/2 cup shredded parmesan cheese
10 - 2 1/2 oz sour cream
11 - 1/4 tsp garlic powder

→ Sauteed Spinach

12 - 1 tbsp olive oil
13 - 1 clove garlic, minced
14 - 1 lb baby spinach leaves
15 - Salt to taste

# Instructions:

01 - Heat olive oil in a large nonstick skillet over high heat. When the oil is hot, add the steak cubes. Cook for about 1-2 minutes on each side, allowing them to develop a golden sear before flipping. This will give you a medium-rare to medium cook (still pink in the middle).
02 - While the steak is cooking, make the sauce in a small saucepan. Combine butter and minced garlic, cooking over medium-low heat until the butter is melted and the garlic starts to brown slightly, infusing the butter with garlic flavor. Stir in the garlic powder and soy sauce. Taste and adjust seasoning as needed.
03 - When the steak has reached medium doneness, reduce the heat to medium and pour the garlic butter sauce over the steak. Stir until the steak is cooked to your desired doneness and evenly coated in sauce. Add more soy sauce if needed. Garnish with chopped parsley.
04 - Pat dry the steamed cauliflower rice and place it in a food processor. Add Parmesan cheese, sour cream, and garlic powder. Process at high speed until the cauliflower is mashed and creamy. Season with salt if needed.
05 - In a large skillet, heat olive oil and add minced garlic over high heat. Add the spinach and cook until tender. Season with salt to taste.
06 - Divide the steak bites, mashed cauliflower, and sautéed spinach evenly among four meal prep containers.

# Notes:

01 - You can use a whole head of cauliflower cut into florets instead of cauliflower rice.
02 - For those avoiding soy, you can omit the soy sauce and season with salt to taste.
03 - Consider cooking the steak to medium-rare initially if you plan to reheat later, to prevent overcooking.
