Mexican-Inspired Meal Prep (Print Version)

# Ingredients:

01 - 2 cups cooked rice (or more)
02 - 1 tbsp olive oil
03 - 5 cloves garlic, minced
04 - 1 lb lean ground beef
05 - 30 grams taco seasoning
06 - 1 cup corn (fire roasted or regular)
07 - 15 oz canned black beans, rinsed and drained
08 - 1 cup shredded cheese (or as much as desired)
09 - Optional: pico de gallo and guacamole

# Instructions:

01 - Start by cooking your rice according to package instructions. You can prepare it plain or add some flavor with broth or seasonings.
02 - While the rice is cooking, heat olive oil in a skillet over medium-high heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the lean ground beef to the skillet.
03 - Stir the beef as it cooks, breaking it into small pieces with a spatula or wooden spoon. Once the beef has browned completely, add the taco seasoning along with 1/3 cup of water. Bring the mixture to a boil, then reduce heat and let it simmer until the liquid has thickened, stirring occasionally.
04 - Divide the cooked rice, seasoned beef, corn, black beans, and shredded cheese evenly among four meal prep containers. If eating immediately, top with pico de gallo and guacamole if desired.
05 - If preparing these bowls for later in the week, package any pico de gallo and guacamole separately to prevent the taco bowls from becoming soggy during storage.

# Notes:

01 - For a quick homemade pico de gallo, simply combine chopped roma tomatoes and red onions with salt and lime juice.
02 - These meal prep bowls will stay fresh in the refrigerator for up to 4 days.
03 - For a lower-carb option, substitute cauliflower rice for regular rice.
