Hearty Broccoli Waldorf (Print Version)

# Ingredients:

01 - 1 small red onion
02 - 2 cups chopped Rockit apples
03 - ¾ cup plain non-fat Greek yogurt
04 - 2 tablespoons light mayo
05 - ½ cup shredded sharp cheddar
06 - 6 cups of broccoli florets (32 oz bag of pre-chopped broccoli)
07 - ½ teaspoon dried parsley
08 - ½ teaspoon salt

# Instructions:

01 - Slice broccoli into smaller chunks if they’re too big, even if pre-cut. Dice up the apples and finely chop the onion.
02 - Put shredded cheddar, apple chunks, red onion pieces, and broccoli in a big bowl.
03 - In a tiny bowl, stir together the yogurt, mayo, parsley, and salt until it’s smooth and blended.
04 - Pour the dressing over the bowl of produce. Toss it gently so every bit is covered evenly.
05 - It’s ready to eat right away, or pop it into a sealed container in the fridge for up to 5 days.

# Notes:

01 - This salad keeps well for up to 5 days in the fridge if stored in a tight container. There’s no lettuce here, so nothing gets soggy.
02 - To keep the mess down while chopping broccoli, cut through the thick stalks instead of the flower bits—they can break apart easily.
