Cheesy Bean Bake (Print Version)

# Ingredients:

01 - One block of cheese (1 lb), shredded (around 2 1/2 cups, like Monterey Jack)
02 - 2 cups refried beans (store-bought or homemade, thin with water if too thick)
03 - 7 small corn tortillas, cut 2 of them in halves
04 - 1 can (15 oz) of red or green enchilada sauce
05 - Toppings you can add: avocado, lettuce, tomatoes, onions, hot sauce, salsa, jalapeños, cilantro

# Instructions:

01 - Set your oven to 425°F and grab a baking pan of your choice, like a 10.5 x 7.5 inch rectangle. Adjust ingredients if using a different size.
02 - Pour 1/2 cup of enchilada sauce at the base of the baking dish. Lay down a layer of tortillas, trimming them if needed to cover better. Spread on a layer of refried beans, then sprinkle shredded cheese evenly over the top.
03 - Drizzle 1/2 cup of enchilada sauce over the cheese, then add a layer of tortillas again. Keep layering on beans, cheese, tortillas, sauce. End with a cheesy top layer.
04 - Wrap the dish with foil and pop it in the oven for 20 minutes. Take the foil off and bake another 15 minutes until the cheese is bubbly and nicely melted.
05 - When it’s out of the oven, give it a little time to cool before serving. Toss on your favorite toppings like avocado or salsa, and maybe serve with chips on the side.
