Honey Peach White Cheddar (Print Version)

# Ingredients:

→ Sandwich assembly

01 - 2 tablespoons unsalted butter
02 - 4 slices white cheddar cheese
03 - 1 tablespoon honey
04 - 2 to 4 tablespoons ricotta cheese
05 - 4 slices sourdough bread
06 - 2 peaches, peeled and sliced

→ Optional additions

07 - Balsamic glaze
08 - Fresh basil leaves
09 - 4 slices crispy bacon

# Instructions:

01 - Go ahead and cut every sandwich in two. Eat it right away so it's still hot and awesome.
02 - Want to take it up a notch? Pop off the top slice and drop in some crispy bacon, a couple basil leaves, or swirl on that balsamic glaze. Toss the bread back on top.
03 - Get your big skillet or panini press warming over medium-low. Lay in your stacked sandwiches. Let them cook slowly till the cheese is all gooey and the bread looks golden brown. If things start going too fast, just turn down the heat.
04 - Spread butter all over the outside of each sandwich so they brown up nice and even.
05 - Start by spreading ricotta on half of each bread slice. Top some with the peach slices, drizzle honey, and lay cheddar cheese across the others. Close them up.
06 - First, peel the peaches and slice them up thin. Set them aside till it's sandwich time.

01 - Spread the butter evenly to get that crispy bite. Grill the sandwiches slow to let the cheese melt well and keep your bread from burning.
