Fried Strawberry Cheesecake Sandwiches (Print Version)

# Ingredients:

→ Filling

01 - 30 g strawberry jam
02 - 150 g strawberries, chopped small (fresh or well-drained from frozen)
03 - 1 teaspoon vanilla extract
04 - 50 g regular sugar
05 - 225 g cream cheese, let it get soft

→ Sandwich

06 - 25 g crushed graham crackers (if you want some crunch)‏
07 - 30 g plain butter
08 - 0.5 teaspoon cinnamon powder (skip if you don't want)
09 - 60 ml whole milk
10 - 2 eggs, beaten up
11 - 8 slices white bread, with crusts cut off

→ For Finishing

12 - Maple syrup or drizzle of honey, totally up to you
13 - Fresh strawberry slices for topping
14 - Sprinkle of powdered sugar to finish

# Instructions:

01 - Toss together jam, diced strawberries, vanilla, sugar, and cream cheese in a bowl. Mix it all up till you see no lumps and everything is mixed in.
02 - Take 4 bread slices and put your filling on them. Place the other slices on top and squish the edges a bit so nothing leaks.
03 - Beat eggs, milk, and cinnamon in a wide bowl until it all looks blended.
04 - Quickly dip each stuffed sandwich in the egg mix so all the sides get soaked. If you want, press into graham crumb coating now too.
05 - Pop some butter in a nonstick pan over medium heat. Cook sandwiches a couple of minutes per side, until they're crispy and golden all over.
06 - Move sandwiches to some paper towels. Slice, sprinkle on powdered sugar, pile on strawberry slices, and pour honey or syrup over if you like.

# Notes:

01 - Dry your berries well or your filling might get watery.
02 - Seal the sandwich edges well so filling doesn't ooze into the pan.
