Garlic Parmesan Chicken and Potatoes (One-Pan Dinner) (Print Version)

# Ingredients:

→ Chicken

01 - 4 boneless skinless chicken breasts (or thighs)
02 - 1 teaspoon Italian seasoning
03 - 1/2 teaspoon smoked paprika
04 - 1/2 teaspoon salt
05 - 1/4 teaspoon black pepper
06 - 1 tablespoon olive oil

→ Potatoes

07 - 1.5 pounds baby Yukon Gold or red potatoes, halved
08 - 3 tablespoons olive oil
09 - 4 cloves garlic, minced
10 - 1/3 cup grated Parmesan cheese
11 - 1/2 teaspoon salt
12 - 1/4 teaspoon black pepper

→ Garnish

13 - 1 tablespoon chopped fresh parsley

# Instructions:

01 - Preheat oven to 400°F (200°C). Line baking sheet with parchment paper or grease.
02 - Mix Italian seasoning, paprika, salt, and pepper. Rub chicken with oil and seasonings.
03 - Toss halved potatoes with oil, garlic, Parmesan, salt, and pepper.
04 - Place chicken and potatoes on baking sheet. Roast 25-30 minutes, flipping potatoes halfway.
05 - Optional: top with extra Parmesan and broil for golden crust. Garnish with parsley.

01 - Can use chicken thighs instead of breasts
02 - Ensure chicken reaches 165°F internal temperature
03 - Place potatoes in single layer for even cooking
