Greek Yogurt Bark (Print Version)

# Ingredients:

01 - 1 c plain Greek yogurt whole milk/full fat
02 - 3/4 c peanut butter
03 - 1/4 c vanilla protein powder
04 - 1-2 T maple syrup or honey
05 - 1/4 tsp vanilla extract
06 - 1 c dark chocolate chips
07 - flaked sea salt optional

# Instructions:

01 - Stir together the yogurt, peanut butter, protein powder, sweetener, and vanilla until smooth and creamy. Spread the mixture evenly (using an offset spatula helps a lot!) on a parchment lined quarter sheet pan. If you don't have this size pan, use a different size or you could try using a 9x13 inch baking pan but it can be tricky to spread in one.
02 - Spread the mixture so it is somewhere between 1/4 inch and 1/2 inch--whatever is your preference is fine!
03 - Melt the dark chocolate chips by microwaving in 30 second increments and stirring in between, making sure not to overheat it.
04 - Once melted, spread it evenly over the peanut butter yogurt mixture. Transfer to the freezer for at least 2-3 hours.
05 - Once frozen, sprinkle with flakey sea salt, cut with a sharp knife into pieces or break it up with your hands! Dig in!

# Notes:

01 - For best results, use full-fat Greek yogurt. This will keep the texture from becoming icy. Low fat or nonfat yogurt will have higher water content and will therefore form icicles in the bark when frozen.
02 - Allow your bark to sit out for several minutes before eating. Easier said than done, right? I know! But if you want a creamier texture, you want to soften them just a bit before eating.
03 - Keep this healthy yogurt bark in the freezer! You don't want this to sit out for long or it starts to become runny. Take out what you want to eat and leave the remaining treats in the freezer.
