Italian Chopped Salad (Print Version)

# Ingredients:

→ For the Salad

01 - 1 head romaine lettuce, roughly chopped
02 - 1 cup chopped radicchio lettuce
03 - 8 ounces fresh mozzarella, cut into 1/4-inch cubes
04 - 4 ounces dry Italian salami, cut into matchsticks
05 - 1 (15-ounce) can chickpeas, rinsed and drained
06 - 1 (2.25 ounce) can sliced black olives, rinsed and drained
07 - 1 yellow bell pepper, diced
08 - ½ English cucumber, diced
09 - 6 pepperoncini, sliced
10 - 1 cup halved grape tomatoes
11 - ⅓ cup chopped red onion
12 - ½ cup shaved Parmesan

→ For the Dressing

13 - ½ cup extra virgin olive oil
14 - 3 tablespoons red wine vinegar
15 - 2 teaspoons Dijon mustard
16 - 1 clove garlic, grated
17 - ¾ teaspoon dried oregano
18 - ⅛ teaspoon crushed red pepper flakes
19 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - Place romaine and radicchio in a large bowl; top with mozzarella, salami, chickpeas, olives, bell pepper, cucumber, pepperoncini, tomatoes and red onion.
02 - In a medium bowl, whisk together olive oil, vinegar, Dijon, garlic, oregano and red pepper flakes; season with salt and pepper, to taste.
03 - Pour the dressing on top of the salad and gently toss to combine. Top with Parmesan.
