Mix peppermint extract with the sweetened condensed milk in a big bowl.

Slowly sprinkle in the powdered sugar while using a mixer to blend. Keep going until the dough feels firm and isn’t sticky.

Shape the dough into little balls, flatten them into discs around 2 inches in size and 1/4 inch thick, then set them on a tray lined with parchment.

Pop the tray in the freezer and let the discs freeze for about an hour.

Put the chocolate almond bark in a microwave-safe bowl and melt it in 30-second bursts until it's smooth.

Dip the chilled peppermint discs into the melted chocolate, letting any extra drip off, and place them back on the parchment. Add sprinkles if you’d like!
