No-Bake Chunky Monkey Banana Bites (Print Version)

# Ingredients:

→ Banana Bites

01 - 3 bananas
02 - ¼ cup peanut butter (or your favorite nut butter)
03 - 11.5 oz chocolate chips (dark or white chocolate work too)
04 - 2 teaspoons coconut oil (optional)

# Instructions:

01 - Slice the bananas into ¼-inch thick slices. Place half of the slices on a lined baking sheet and set aside the other half.
02 - Heat the peanut butter in the microwave for 30-45 seconds to make it easier to spread. Spoon about ½ teaspoon of peanut butter onto each banana slice. Top with the remaining banana halves to create sandwiches.
03 - Place the peanut butter-stuffed bananas in the freezer for about 1 hour, or until firm.
04 - In a microwave-safe bowl, heat the chocolate chips (and coconut oil, if using) in 30-second intervals, stirring until fully melted.
05 - Using a fork, dip each frozen banana bite into the melted chocolate, ensuring it’s fully coated. Place them back on the lined baking sheet.
06 - Return the chocolate-coated banana bites to the freezer for at least 1 more hour, or until solid. Transfer to a freezer-safe bag or container for storage.

# Notes:

01 - For extra fun, sprinkle crushed nuts, sprinkles, or shredded coconut on the chocolate-coated bites before freezing.
02 - Make sure your baking sheet fits in your freezer before starting!
03 - Store in an airtight container in the freezer for up to 2 weeks.
