Slice the bananas into ¼-inch thick slices. Place half of the slices on a lined baking sheet and set aside the other half.

Heat the peanut butter in the microwave for 30-45 seconds to make it easier to spread. Spoon about ½ teaspoon of peanut butter onto each banana slice. Top with the remaining banana halves to create sandwiches.

Place the peanut butter-stuffed bananas in the freezer for about 1 hour, or until firm.

In a microwave-safe bowl, heat the chocolate chips (and coconut oil, if using) in 30-second intervals, stirring until fully melted.

Using a fork, dip each frozen banana bite into the melted chocolate, ensuring it’s fully coated. Place them back on the lined baking sheet.

Return the chocolate-coated banana bites to the freezer for at least 1 more hour, or until solid. Transfer to a freezer-safe bag or container for storage.
