# Instructions:

01 - Prep all ingredients before cooking. Dice chicken into bite-sized pieces, chop onion, mince garlic, and measure out spices. Drain and rinse black beans.
02 - Heat olive oil in a large, deep skillet over medium-high heat. Add diced chicken, season with salt and pepper. Sear for 4-5 minutes until lightly browned. Remove and set aside.
03 - Reduce heat to medium. Add diced onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds, stirring constantly.
04 - Add uncooked rice to the pan, stirring to coat in oil and toast for 1-2 minutes. Sprinkle in chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
05 - Pour in chicken broth, diced tomatoes, black beans, and corn. Stir to combine. Return seared chicken to the pan, nestling it into the rice mixture.
06 - Bring to a gentle boil, then reduce heat to low. Cover with a tight-fitting lid and simmer for 18-20 minutes (30-35 minutes for brown rice) until rice is tender and liquid is absorbed.
07 - Remove from heat and let sit, covered, for 5 minutes. Fluff rice with a fork, mixing in chicken and vegetables.
