# Instructions:

01 - Preheat the oven to 375°F (190°C), while greasing a baking dish with olive oil.
02 - Grate potatoes and squeeze out excess moisture using a towel to ensure a crispy texture.
03 - In a large bowl, combine grated potatoes, diced onion, eggs, matzah meal, salt, and pepper. Mix thoroughly.
